From September 2018, Jianing Liu works as a PhD under the supervision of Prof. Vincenzo Fogliano, Dr. Ruud Verkerk and Dr. Matthijs Dekker. Her topic is about the digestion and absorption of bioactive compounds, and the structural analysis of macromolecular substances. The objective is to investigate the correlations between precise pectin structure and the digestion and absorption of carotenoids in combined juices of carrot and peach, aiming for facilitating processing as a tool for developing juice with enhanced level of bioavailable carotenoids. Until now, she has published 9 peer-reviewed papers as the first author and over 20 peer-reviewed papers as co-author.
