Protein Alternatives and Food System Studies in Transition Countries

The research theme Food System Studies in Transition Countries focuses on the design of improved food products for people living in transition countries, with a special emphasis on sub-Saharan Africa. In these countries large groups of the population do not have access to the foods they need to meet their daily requirements of macro- and micronutrients, for instance essential amino acids, iron, zinc and vitamins like vitamin A. Based on an assessment of consumer demands, wishes and preferences we study the production chains of locally produced foods and seek technological options to improve food quality in the local setting.
