Bringing Reality to Food Waste in the Catering Industry (BSc / MSc)

Food waste is a significant problem in the current economy. In the Netherlands, about 9.5% of individually bought food is wasted, this equates to 34,3 kg of solid foods per person per year. Current communication practices within the catering industry involve data-driven representations of food waste (down to the individual product category level) to show value and loss based on location and day of the week.
Translating this information into a measure of true volume for the consumer to visualise is a challenge but one that immersive solutions such as Augmented Reality and Virtual Reality could solve. This project will involve collaborating with two companies (an AR/VR specialist and catering industry data analyst), specifically for the visualisation of the scope of leftovers.

Short description

Food waste is one of the Sustainable Development Goals (goal 12.3) and the Netherlands and the EU have committed themselves to reduce their food waste by 50% in 2030. Currently, food waste accounts for 8-10% of all the greenhouse gasses emitted by the Netherlands. More solutions are required to address the pattern of waste and equip kitchen teams with insights that will allow them to visually pinpoint required actions in an engaging manner.


    Objectives

    1. Review current processes for visualising food waste, and assess what current approaches are used to adapt to waste reduction.
    2. Identify and develop solutions/applications that are suitable for supporting food waste visualisations.
    3. Provide a first test on consumer responses to the visualization of food waste, as compared to data-driven numeric information.
