This course provides the essential skills, on an academic level, for designing healthy foods for specific categories of consumers in the European legislative framework of nutritional and health claims.
Healthy food design
A detailed overview of the functional ingredients is provided together with a critical discussion of the tools to validate the health claim. How to prepare an EFSA dossier is one of the topics too. Presentation of failure cases of healthy food design in the food industry will provide examples of “do and don’t” in the healthy food design procedure.
After successfully attending the course, participants gained the latest knowledge in regard to healthy food design and received practical tips and insights in how to develop healthy products.
