Healthy food design programme

The lectures of the course will be given by experts from Wageningen University & Research. The programme focuses on integrating and enhancing theoretical knowledge with practical insights. The following topics will be discussed during the programme, which offers ample time for discussions and interaction with the speakers as well.

Target group

This course is designed for food professionals, in specific product developers, quality managers, managers regulatory affairs and researchers, from universities, government and industry, that are interested in knowing how to design healthy foods for specific categories of consumers. The attendants should have knowledge of human digestion processes and of food science and nutrition. A BSc. level of a food or science related education is recommended.

This course provides participants with the essential skills for designing healthy foods for specific categories of consumers in the European legislative framework of nutritional and health claims. A step by step approach is learned to be translated in the daily business of the participant. A detailed overview of the functional ingredients is provided together with a critical discussion of the tools to validate the health claim. Practical information about building EFSA cases will also be discussed.

• Definitions and legislative European framework nutrition & health claims
• A step by step approach on how to design healthy foods for specific categories of consumers
• The main bioactive ingredients for healthy food design and how they behave during gastro intestinal digestion
• How to prepare, both scientifically and practical, an EFSA dossier for asking for a health claim
• Learning of examples of “do and don’t” in healthy food design procedure
