Food chains for sustainable and healthy diets

For healthy, sustainable and affordable diets, actors in food supply chains need to redesign their structure and management practices. Wageningen attributes to this by defining these diets for the Dutch. The researchers develop mathematical decision support models that combine requirements regarding health, sustainability and affordability. In case studies the impact of a population shift towards a more plant-based diet will be analysed. The project will result in insights in optimal dietary menus for Dutch population segments according to age, sex and dietary habits and what this requires of the food supply chains.
