Food for one person

Do you have a kitchen of your own or do you sometimes have to eat on the hoof instead of joining your roommates because you need to leave early? The chapter 'Food for one person' offers useful tips for tasty dishes for one.

Here is one recipe you can try. For more recipes, you can buy the cookbook Food for Students from September 2 at the beach club, in the WUR shop and in the webshop for €14.95.

Salmon Pastry

Dinner
Serves 1
Fish

  • 1 fillet of salmon
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • A pinch of herbs de Provence or other herbs
  • 2 sheets of puff pastry, defrosted
  • 1 beaten egg

Necessary utensils: baking sheet, baking tray

  1. Pre-heat the oven to 200º C.
  2. Wipe the salmon dry with a paper towel.
  3. Mix lemon juice, oil and herbs and season with pepper and salt. Coat the salmon with the mixture.
  4. Discard the protective plastic sheet from the puff pastry and put one pastry sheet on the baking tray which you have covered with a baking sheet. Put the salmon on the pastry; no problem if the salmon is slightly larger than the pastry sheet.
  5. Glaze the edges of the pastry with the beaten egg. Cover with the second sheet of pastry. Pinch the edges together with a fork. Glaze the top with beaten egg and punch some small holes with a fork.
  6. Bake the pastry in 25 minutes until the salmon is done and the pastry is golden.
Enjoy!

Tip

Fry an omelette from the remaining beaten egg.
