Edoardo Capuano on the digestion and true energy content of food

Our colleague Edoardo Capuano told us some more about the effect of food matrix and digestion on the true energy content of foods during the FQD seminar.

Energy content of nutrients may be different when the same nutrient is in different foods. The current methods for calculating energy content of foods and diets may overestimate their energy content especially for diets like the vegan or the vegetarian diet rich in plant foods which retained their structural integrity like whole seed and nut, cereals and legumes.
