“Prof. Forde Contributes to the Food Chain Podcast (BBC)”

Sensory Science and Eating Behaviour Chairholder Prof. Ciaran Forde recently contributed to the BBC World-service podcast “The Food Chain” episode on the topic of “Crunch”.

The episode traced the origins of our preferences for crunchy foods, described how the development of our oral anatomy is shaped by crunching and chewing, and outlined research from the SSEB chair group on the importance of food texture in moderating eating behaviours and energy intakes.
