From September 2019, Xiyu Jiang works as a PhD under the supervision of Prof. Vincenzo Fogliano, Dr. Matthijs Dekker and Dr. Ruud Verkerk. Her topic is about the study on anthocyanin-pectin interaction; impacts on the digestion and physicochemical properties of anthocyanin. The objective is to investigate the effect of pectin structure on anthocyanin processing, storage and digestion, the physical and chemical stability of anthocyanins and the effect of pectin on the bioaccessibility of anthocyanins and their binding mechanism.
