Transition in India’s food systems: increasing protein through soy-based tempeh : Case study report: Improving understanding on the role of consumers in low and middle-income countries (LMICs)

Summary

Presently, understanding of the consumer's role in shaping a more sustainable food system, especially in low and middle-income countries (LMICs), is weak. The project ‘Improving understanding on the role of consumers in low and middle-income countries (LMICs)’, aimed to increase knowledge of the consumer's role in the entire food system, fostering more sustainable food systems. This report presents the findings of the case-study on the Indian food system. It delves into the factors influencing sustainable food systems and food consumption. For this the experiences gained by Schouten Group, a Europe-based food company that is developing and marketing soy-based tempeh in India, were studied and analysed. Two analytical lenses developed in this case study are presented. These lenses allow a quick and broad overview of those factors and support continuous evaluation of the system. Together with the two analytical lenses, the research finding offer insights to companies about possible entry-points to influence consumer perspectives and consumption of protein-rich foods, and thus contribute to food systems transition in India.
