Zhijun Wang on composition and authenticity of bananas

Our PhD colleague Zhijun Wang told us some more about the main factors influencing the composition of bananas during the FQD seminar.

The main factors influencing the composition of bananas are variety/cultivar, geographical origin and management system. Fruits are becoming more vulnerable to crime with the development of economic globalization and the world food trade. Imported tropical fruits are particularly targeted because of their premium/higher prices and longer food chains.

The aim of the project is to establish the origin identification system of bananas using fingerprint technology. A variety of chemical analyses, spectra and chromatographic analysis techniques will be used to establish the fingerprint of bananas. Based on the application of chemometrics, we could provide a concept for the relationship between the composition of bananas and their geographic and management system features.
