Defensive reactions against nutrition education and dietary information

People find themselves confronted with a wealth of information about what food is healthy and what food is unhealthy. Think about information in the news, websites, magazines or in conversations with others. Health nutrition is a popular topic, but it is very difficult for individuals to evaluate all this information.

Consumers may find it very hard to determine what exactly is healthy, which may lead to ambivalence towards, defensiveness against, or neglect of dietary information. On the contrary, it sometimes seems as if information about unhealthy foods is much more easily adopted. What happens when people are confronted with nutrition information? When is this information adopted and when resisted? What aspects of nutrition education increase the likelihood of adoption or rejection?
