Meet our course leader: Dr Julian Verdonk

A molecular plant physiologist and expert in product quality, Dr Julian Verdonk studies how growth conditions influence the biosynthesis of specialised metabolites—compounds essential for the quality of cut flowers, vegetables, and fruit. Leading a research group at Wageningen University & Research (WUR), he supervises master’s students, PhD candidates, and postdocs while advancing scientific insights in postharvest physiology and quality analysis. 


The Science Behind Freshness and Quality 

Julian is the course leader for Fresh Food and Quality and a lecturer in Greenhouse Horticulture and Vertical Farming. His research explores how (a)biotic factors during cultivation affect plant product quality, focusing on biochemical pathways regulating flavour, texture, and shelf life. He investigates genes and enzyme mechanisms involved in plant natural products, applying this knowledge to improve crop resilience against pests, drought, and salinity—while enhancing postharvest quality. 

His work contributes to reducing food waste, minimising plastic use, and promoting more sustainable transport solutions, aligning with global sustainability goals.
