Saskia van Ruth and her co-workers learn about factors determining food fraud risks. They also search for special chemical and physical traits of food products that reflect their authenticity in terms of general composition, and production and geographical origin using novel analytical approaches. This presentation will provide a glimpse of the world of food fraudsters and their combatants.
