Master classes in Hygienic design

Vision of the programme

Master class participants are challenged to apply the lessons learned during the programme in their actual company operations. Through the efforts of exceptional speakers and activating methodologies, the knowledge sinks in and the participants are enthused and encouraged to jointly work on new developments. In this regard, Professional Rebel* provides a new perspective, namely the successful start-up that offers a glimpse into how innovative company operations can be achieved in practice on the basis of personal experiences. In order to achieve the maximum personal benefits, the group is limited to a maximum of 30 people per master class.

The theme of the day is Hygienic design

The food industry aims to increase food safety and avoid product recalls, for instance by actively managing the risks relating to the hygiene of processing equipment. A great deal of scientific knowledge is available on innovative materials with special surface properties, CIP systems with sensors, wireless communication, automation, risk analyses, and fast online microbial identification methods. It is not easy for producers to choose the most suitable hygienic design from the many options, and mechanical engineers have to deal with many different production processes and missing or unclear rules and standards. How can we bring the scientist, the food producer, and the mechanical engineer closer together by sharing and standardising existing knowledge, and promote successful hygienic design? And how can the lead of the Dutch sector be utilised internationally?

The theme of the day is Food customisation by means of 3D-printing

Food can be made more sustainable and healthier in various ways, for instance by wasting less food, by using other raw materials, or by tailoring your nutrition to your genetic passport. Further improved technical applications are continually becoming available, which make large quantities of data available about the ‘quantified self’. One interesting technological solution for customised nutrition is 3D food printing. Nevertheless, investments in bringing this technology to the market are still only very small. Why? What are the short-term and long-term challenges with regard to increasing the flexibility of the technology, further developing the chain, and boosting consumer acceptance and demand? Which parties need to come to the table to achieve this, and which challenges can we take on and resolve together? In short, how do we use 3D food printing to make the step from an amusing hype to a broad, value-adding application

Food chains are becoming ever more complex, and every link in the chain influences the final product quality. More and more governments, institutions and companies are taking steps to reduce food wastage within the chain. The right packaging can make a significant contribution to this. In technical terms, there are many possibilities in the use of new materials, chips, sensors, modified air, nanotechnology, tracking & tracing, and big data. Why are distributive traders, food producers and retailers hesitating before investing in real innovations? What are the conflicting interests concerning the provision of accurate information to the consumer? How can the technical solutions be linked with the right business cases in order to improve the product quality and shelf life and to avoid food wastage?

The theme of the day is Energy-efficient cooling and heating

Climate change is a serious threat and an urgent issue. The incentive to invest in more energy-efficient food production machines and systems appears small at present because energy is cheap. Saving energy starts with knowledge and control of the cooling or heating process and the impact on product quality. Methodologies are also important in the identification and quantification of the possible innovations. What knowledge is necessary to improve traditional processes and to promote the use of natural energy resources? How can we convince the industry to invest more in energy-efficient cooling and heating technologies? Can CO2 emissions - alongside price - also be used as a competitive advantage? And what opportunities and challenges lie within the international market?

Other events: 3rd and 4th December

Three December the entire chain is brought together to stimulate and specify innovations. The Agro Food & Technology conference is a day filled with substantive keynote presentations and interactive roundtable sessions. During this day concrete innovation plans will be challenged with the Agro Food & Technology Award.

At the end of the week, on the fourth of December, the private meeting 'Dutch food systems, facilitating food worldwide'  will be organized on the occasion of the retirement of Jan Hak as chairman of GMV (Dutch Association of Equipment Manufacturers for the Food).
