John E. Hayes, Associate Professor of Food Science and director of the Sensory Evaluation Center, will give an exciting talk entitled: "There is a brain at the other end of those receptors: implications for research on flavor and eating behavior".

Flavor is an integrated percept arising from input from multiple sensory systems, and it is generally, if implicitly, accepted that food flavor is a driver of food choice and presumably chronic diet. However, an understandable desire for experimental control can lead to reductionism: that is, the oversimplification that if we know the stimulus and its cognate receptor, then we can predict percepts and behavioral responses. This talk explores in-situ and receptor level phenomena that complicate the relationship between stimulus and percept, and highlight data on non-intuitive perceptual interactions that occur with multimodal stimuli, in the context of research on ingestive behavior.
