Rapeseeds and sunflower are the 2nd and 3rd largest production worldwide seeds besides soybean. The oil is produced by pressing the rapeseed and sunflower seeds, and the pressed meal is yielded as by-products, which are mainly used for the livestock feed and considered as waste streams. Both rapeseed and sunflower meals contained a high amount of protein, which is comparable to the soybean meal. Therefore, rapeseed and sunflower meals were considered nowadays as potential plant protein sources. This study aimed to make fibrous structure by the rapeseed and sunflower pressed meal towards the plant-based meat analogue application. The materials were treated by aqueous ethanol washing, where the undesired components such as phenolic compounds were removed, and protein concentrate was obtained. The concentrate successfully formed the fibrous structure using shear cell technology and the fibrous structure is an important structural property for the meat analogue.
