Characterization of soft matter (food) structure under stress (DNP-Rheo-NMR/MRI)

  • Food properties depend on composition, processing and Multi-length scale architectures. Hardly no methods are available to reliably characterise non-invasively multi-length scales of soft matter (e.g. gels). In this research we explore diffusion behaviour of functionalised nanoparticles (dendrimers, C3micelles) (F).
  • By use of (Dynamic Nuclear Polarisation, DNP)Rheo-MRI (G)we study in situ dynamic structure formation / degradation.
