Eating from a food forest

Yes, it is definitely possible to create a healthy, varied and attractive diet from ingredients out of a food forest.

As food forests are a relatively new phenomenon, there is still little understanding on how to make optimal use of the edible products that food forests generate. There is a risk that a lack of knowledge will limit the use of food forest products and therefore the potential of food forest products to play a role in our future diet. Therefore, we asked a group of 7 WUR students to dive into the matter of what eating from a food forest entails.

In an Academic Consultancy Training (ACT) project, seven students executed a fascinating base line study on eating from a food forest. For this base line research, we decided to explore the extreme scenario of eating what the season offers. This approach made clear that there are definitely challenges in meeting the daily recommendation of nutrients, as well as in creating dishes that offer sufficient variety. The students’ advice provides suggestions for these challenges as well as recommendations for future research.
