The master's study programme Food Safety at Wageningen is unique and consists of three different specialisations:
- Applied Food Safety,
- Food Law and Regulatory Affairs,
- Supply Chain Safety.
The Applied Food Safety focuses on the more technological aspects of food safety (microbiology, toxicology) and food safety management whereas the focus of Food Law and Regulatory Affairs is on food legislation and Supply Chain Safety on the supply chain for foods and ingredients and the factors that play a role in the safety during transport. All three specializations have two compulsory courses in common, being Food Law and Food Safety Management. Students of Food Safety follow one year (first MSc year) of specialised courses and conduct one year of research (second MSc year) through a thesis at Wageningen University

Master's Food Quality Management. Food safety and food quality are naturally interlinked. Food safety is part of quality control systems. However, in the master's Food Safety, students gain a deeper understanding of microbiology, toxicology, risk analysis and food safety management, or focus wholly on food legislation. In Food Quality Management there is a much broader focus on quality and less emphasis on food safety.
Master's Food Technology. This study programme focuses more on food production thereby entailing elements of quality which this specialisation shares with the master's Food Quality Management. Food Safety though focuses less on the product than Food Technology.
