Summary
Peppers have numerous compounds that are beneficial to human health, such as flavonoids, carotenoids, chlorophylls and vitamin E. However, there is considerable variation in the content of these compounds among pepper varieties. This study examined the reasons for these differences and the mechanisms by which genes regulate them. Pepper varieties with different colours and nutritional characteristics were compared to identify genetic regions and genes associated with fruit colour and the accumulation of these compounds. The findings provide a better understanding of the development of colour and health-promoting properties in pepper. They could help breeders select suitable plants and develop new varieties with higher nutritional value and fruit quality.
