The real story about ultra‑processed food.

The "Universiteit van Nederland"( University of the Netherlands) video explains why processed food is a complex category that does not determine whether a food fits within a healthy diet. This was also illustrated in the RESTRUCTURE project, in which participants followed two separate 2-week dietary periods designed to investigate how food texture and eating rate of Ultra-processed foods diets (~ 95% kcal from Nova 4, UPF) influence energy intake. When people ate slow due to the texture of their diet they consumed 369 kcal per day less compared to the Fast ER diet. The findings highlight that characteristics such as texture and eating rate play an important role in shaping eating behaviour and metabolic responses, beyond simply classifying foods based on their level of processing.
