Food safety and shelf life are constant challenges in the food industry. Microbial contaminants posing risks to both consumer health and brand reputation. Safety and shelf life by design helps companies design safer, more stable products by combining microbiology, chemistry, sensory science, regulation and product innovation.
Over the years, we have performed hazard identification studies for many food production chains of both animal and plant origin. Using this knowledge, we developed a Decision Support System (DSS) – a data-driven framework for automated hazard identification and for determining whether a food product formulation supports the growth of pathogens.
Building on this DSS, we created the Food Safety by Design (FSbD) tool: a user-friendly, web-based application that allows food producers to easily identify potential microbiological and chemical hazards in their products and processes. By combining the DSS “engine” with the FSbD tool’s practical interface, companies can reduce costly testing, streamline reformulation, and ensure safe, stable products.
