Dr. Lu Zhang is assistant professor on additive food assembly. Lu received her doctoral degree at Wageningen University in 2018. She invesigated bioactive ingredients during mini-bread baking as her PhD project. She recieved both her BSc and MSc degrees in Chemical Engineering from Xiamen University, China. Her current tenure track position is funded by the NWO Sectorplan Mechanical Engineering. Lu 's research interests include complex food systems, 3D food printing and material science. She is currently leading a team which consists of seven PhD students, one postdoctoral researcher and one research technician. The members of her research teams have a diverse educational background, ranging from chemical engineering, food technology to electromechanics and material science. Her research in food printing aims at creating ways to personalise nutrition. To further advance the food printing technology, she and her team conduct research to better understand how food materials react to process conditions; how composition of food influences its printing performance; and how to better control the printing system to achieve high product quality. The members of her team combine their background in engineering and food science to make the future in personalised food possible!
