Food Digestion and Health
The objective of our research projects is to understand the interaction between food and the whole gastrointestinal tract, including gut microbiota, in order to optimize bioavailability of nutrients and sensory perception and produce delicious and healthy foods.
Our main research themes are:
- Effect of the food matrix on nutrients bioavailability
- Effect of foods and diet on gut microbiota and health
- Design of new carrier systems for target delivery in the gut
- Understanding fundamental physical and perceptual concepts determining texture
- Explain the relation between food structure, oral behaviour, and sensory perception?
