Summary

This thesis shows how food composition, processing, and texture influences the digestion in the stomach and subsequent nutrient absorption. This knowledge this thesis contributes to our understanding of how these food properties impact digestion, and how interindividual differences might play a role. This knowledge will contribute to improving our ability to improve digestion, optimal utilization of nutrients, tailoring foods for specific needs, or even personalized nutrition.
