Call for Partners | PLANTICIOUS: Advancing hybrid fermented milk products

Europe’s market for plant-based fermented milks remains small, held back by technological challenges, limited product options, and consumer dissatisfaction with taste and texture. At the same time, there is growing demand for more sustainable foods and for dairy products with a reduced environmental footprint. Hybrid products—combining plant-based and dairy ingredients—offer a promising pathway, yet no hybrid fermented milk currently exists on the market due to gaps in formulation, fermentation technology, and scalable manufacturing solutions.

PLANTICIOUS is launching a collaborative project to close this gap by developing a dedicated fermentation platform for safe, nutritious, tasty, and texturized hybrid fermented milks.

Bringing together experts in food biotechnology, ingredient and culture development, product formulation, process optimization, and consumer research, we aim to deliver:

  • Novel hybrid milk formulations and specialized starter cultures
  • Optimized, scalable fermentation processes up to pilot scale
  • Comprehensive assessments of product quality, safety, consumer acceptance, and sustainability
  • A transferable platform that can be adapted for future hybrid fermented products
