Ferment4Health: Scientifically substantiating the health benefits of fermented foods

Fermented foods, supplements, and pre-, pro- and postbiotics are widely used to support health. However, robust scientific evidence to support associated health claims is often still lacking. In Ferment4Health, Wageningen University & Research (WUR) investigates how fermented products and bacterial components contribute to gut and immune health. To do so, we combine in vitro studies with human intervention trials.
From promise to proof in fermented foods
From yoghurt and drinks to capsules and powders: consumers are increasingly searching for products that support their gut health and immune system. As a result, the market for fermented foods, probiotics, and supplements is growing rapidly. At the same time, there is a significant challenge, as many health claims remain insufficiently substantiated.
Furthermore, the field itself is evolving. Whereas research traditionally focused on delivering live microorganisms to the gut, there is growing realisation that dead bacteria, their metabolites and bacterial cell components also influence gut and immune function. The field of research into such postbiotics is constantly evolving and requires robust, well-validated models that go beyond isolated observations.
Unravelling mechanisms
Ferment4Health brings structure to this complex field by combining product development, mechanistic insight and human validation. Within the project, WUR evaluates a broad range of fermented products, prebiotics, probiotics, postbiotics and bacterial components, supplied by industrial partners.
The core of the approach consists of a phased research design. First, products are assessed in advanced in vitro models containing receptors, intestinal epithelial cells and immune cells. The products undergo a simulated digestion to identify biologically relevant components, which are then tested further. This ensures the researchers avoid investigating substances that the body breaks down completely before they reach the small intestine and immune cells.
Within Ferment4Health, we offer three complementary in vitro assays, each targeting a specific health aspect:
- Activation of antimicrobial responses in the gut
- Reduction of low-grade inflammatory responses in and originating from the gut.
- Activation and training of the innate immune system to induce rapid responses to bacterial or viral infections
These models enable us to identify which products or components can dampen inflammatory responses, strengthen antimicrobial defence or provide long-term immune support.
From laboratory to humans
A key distinguishing feature of Ferment4Health is the direct link between in vitro findings and human intervention studies. We select products that show the most promising effects in the laboratory for testing in healthy volunteers during so-called challenge tests. Before and after intervention, we measure biomarkers in blood and stool samples to assess inflammation, antimicrobial activity and immune activation.
By measuring the same mechanisms both in vitro and in humans, Ferment4Health can determine whether and how laboratory findings translate into measurable physiological effects. This creates a remarkably comprehensive line of evidence, which is essential for credible health claims and targeted product development.
Relevance for industry and society
Ferment4Health supports the food and supplement sectors to make informed choices in a rapidly growing, yet scientifically complex, domain. The project facilitates the development of products with demonstrable effects on gut and immune health and contributes to transparent, well-substantiated communication towards consumers.
A strong public–private partnership
Ferment4Health is a public–private partnership within the Top Sector Agri & Food, in collaboration with Top Sector Health~Holland. The consortium includes industrial partners such as Corbion, Kerry, Ani Biome, Medex, Puratos and CNIEL, in collaboration with WUR.
