Call for partners: SUPERB - Structuring Mildly Refined Oil-Rich Protein Ingredients Into Tasty and Healthy Meat Alternatives

Current production of meat alternatives is resource intensive and results in meat analogues that often lack juiciness. Our recent findings have shown that oral oil release is one of the key factors in perceived product juiciness. This consortium investigates custom emulsions, oleosomes, and oilseed presscake extracts to deliver oral oil release.

We are looking for partners that are interested in structuring tasty, healthy and more sustainable meat alternatives.
