Introduction

The Alpha-Tool helps dietitians, chefs and food developers assess and optimise protein quality using amino acid composition and digestibility data for plant-based meals, enabling evidence-based nutrition in healthcare and food production. The tool is developed by Wageningen University & Research and University of Copenhagen.

About the Alpha-Tool

The Alpha-Tool addresses the need for accurate and practical assessment of protein quality in meals and food products, particularly in healthcare and food service settings. Dietitians, chefs and food developers require reliable methods to ensure plant-based meals meet protein requirements, especially for vulnerable populations such as older adults at risk of muscle loss.

Assessing protein quality is complex, as it requires integration of essential amino acid composition and protein digestibility. This complexity can hinder consistent and evidence-based decision-making in meal planning and product development.

The Alpha-Tool solves this by translating scientific data on amino acid composition and digestibility into the Meal Protein Quality Score (MPQS), a single, actionable metric. It enables users to compare, evaluate and optimise recipes and products based on protein quality.

The tool can be used directly in meal planning and product formulation workflows to support consistent, evidence-based nutrition decisions in healthcare and food production environments.
